There is nothing like the mouth-watering scent of a Christmas cake to get the holiday spirit flowing! While pies, squares and cookies are a big part of holiday season baking, the Christmas cake simply can’t be beat. It can be the cornerstone of a great Christmas Day meal or the light-hearted addition to the Christmas Eve celebration. Whatever your personal taste and preference, there is a Christmas cake to suite your needs. Get baking!

There is actually quite a bit of history behind traditional Christmas cakes. The original Christmas cake was not a cake at all but rather porridge in England. After some time, people decided to start adding nuts and fruit to the porridge which eventually made it very stiff. At that point it evolved into more of a pudding. Those that were better off and had rudimentary ovens decided to add eggs, substitute flour and bake it into a sort of pudding/cake.

Although these “cakes” all but died out during the 16th century, they were brought back with gusto in the 17th century. In the 19th century Europeans were sending these fruit cakes to America where their American family members modified the recipes with fruits and nuts found here. The cakes they sent were often boiled instead of baked because this method preserved the cake for much longer. After all, the cakes would have to survive a pretty long sea voyage. The rest, as they say is history. Today’s Christmas cakes have a litany of fruits and nuts baked into them. Some have fondant icing but many are served plain. A strong blend of spices brings the entire recipe together.

Cakes at Christmas don’t necessarily have to be fruit cakes. In fact, while fruit cakes are often on display, not many people actually enjoy them. You’ll find many traditional cakes during the holidays including chocolate, sponge and white varieties with many variations of icings. Carrot cake is also a favourite and makes for an especially great dessert when topped with a whipped cream cheese icing! Those who don’t particularly like cakes can stick to the traditional pies, puddings and cookies made so popular throughout the years.

Christmas cakes are about more than dessert. The traditional variety carries with it a storied past that tells us much about our culinary history. Although very interesting, many don’t find them particularly tasty. That’s okay! Today Christmas cakes have evolved to satisfy a wide variety of taste buds. One quick search on the internet will yield more recipes than you’ll be able to bake in an entire lifetime.
